Thai Beef Salad

Thai Beef Salad

Colourful, healthy, moorish salad that is delicious all year round.

Ingredients

(Makes 4 servings)

500 grams rump or topside steak
200 grams rocket and/or mixed lettuce leaves
200 grams tomatoes
1 cucumber, medium
1 red onion, medium
3 tablespoons mint leaves
1 bunch coriander leaves
2 tablespoons lemon or lime juice
1 tablespoon brown sugar
3 tablespoons soy sauce
2 tablespoons sweet chilli sauce
2 teaspoons oyster sauce

Instructions

1. Fry or char-grill beef over high heat for 1-2 minutes each side or until cooked to your liking. Set aside to cool.
2. Arrange rocket, chopped tomatoes & cucumber, sliced onion, roughly chopped mint and coriander on a serving platter.
3. To make dressing, mix all ingredients in a bowl to combine.
4. Slice beef thinly and arrange on salad, drizzle with dressing and serve.
