Chicken is actually one of the trickier foods to barbecue well.
Ingredients
5000g chicken fillets cut into 3 cm chunks
1 onion,finely chopped
1 clove garlic, crushed
1/4 cup lemon juice
1/4 cup soy sauce
2 tablespoons oil
1 tablespoons crushed almonds
1/4 teaspoon ground coriander
dash of Tabasco sauce
freshly ground black pepper
Instructions
1. Combine marinade ingredients and marinate chicken for 3 to 4 hours.
2. Drain meat and thread on skewers.
3. Barbecue for 20 minutes over moderate heat,turning and basting frequently.
