Rice noodles with hot garlic and chilli sauce

This is very nice Chinese food.

Ingredients

1/4 cup water or stock
6 cloves garlic chopped
1 tablespoon finely chopped fresh chopped
4 dried Chinese mushrooms
Pre soak for 30 minutes in hot water
Discard stems and finely slice
500 grams fresh rice noodles, cut into into strips
1/2 cup diced shallots
1 tablespoon Chinese wine or dry sherry
2 teaspoons low salt soy sause

Instructions

1. Bring water or stock to the boil and stir fry ginger,garlic, shallots,chillies and mushrooms until tender.

2. Add soy sauce and sherry to wok.Bring large saucepan of water to the boil and plunge in noodles for 1 minute.Remove and drain.

3.Add to wok with remain ingredients.Toss and stir for 1 minute.Serve hot.
