A simple, healthy soup that is easy to make.
(Serves 4)
half pumpkin
2-3 carrots
1 apple
2 stock cubes
pepper
1 teaspoon sugar
4 cups water
1. Peel about half a pumpkin and cut into small pieces and place in a saucepan.
2. Peel about 2 - 3 carrots and cut into pieces and add to pan.
3. Peel and core an apple and cut into pieces and add to pan.
4. Add enough water to cover all the ingredients and the sprinkle some black pepper and sugar and throw in some stock cubes.
5. Cook for about 30 mins and then puree. 6. Add mint leaves to garnish.
